  • SERVES 4
  • PREPARATION TIME 12 minutes
  • COOKING TIME 18 minutes
  • For the pancake:
  • 3 large eggs
  • 60g unbleached all-purpose flour
  • 2 tbsp granulated sugar
  • 120ml whole milk
  • 50ml Maibock or other helles bock beer
  • ¼ tsp fine sea salt
  • 3 tbsp unsalted butter
  • For the topping:
  • 1 tbsp granulated sugar
  • ¼ tsp ground cinnamon
  • 150g diced strawberries
  • 125g raspberries
  1. Preheat the oven to 220ºC/fan 200ºC/gas mark 7. Place a 25cm ovenproof frying pan in the oven.
  2. Add the eggs, flour, sugar, and milk to a blender. Purée on high until smooth, about 10 to 15 seconds. Pour in the beer and add the salt. Purée until blended, about 10 more seconds.
  3. Once the oven is preheated, carefully remove the hot pan. Add the butter to the pan and turn the pan to coat the bottom as it melts completely. Pour in the pancake batter.
  4. Bake for 18 minutes, until puffed and golden brown. Remove from the oven and let sit for five minutes. In a small bowl, stir together the tablespoon of sugar and the cinnamon. Sprinkle it over the pancake and top with the berries. Slice and serve warm.
