A quick healthy supper for two or take the rest for lunch the next day

  • SERVES 2
  • PREPARATION TIME 15 minutes
  • COOKING TIME 5 minutes
  • 150g dried soba noodles
  • 100g tomatoes, halved
  • Big handful of mixed herbs, chopped
  • 1 tbsp rice wine vinegar
  • 1/2 tbsp honey
  • 2 spring onions (scallions), sliced, to serve
  • 120g tinned tuna in olive oil, drained weight
  • 1 medium avocado, chopped
  • Juice of 1/2 lemon
  • 1 tbsp soy sauce
  • 1 tbsp mixed sesame seeds
  • Sea salt and freshly ground black pepper
  1. Cook the soba noodles according to packet instructions, then allow to cool.
  2. Drain the tuna, reserving two tablespoons of oil. Place the tuna in a large bowl, then flake with a fork. Add the noodles, tomatoes, avocado and herbs.
  3. Place the reserved oil, lemon juice, rice wine vinegar, soy sauce, honey and sesame seeds in a jug and mix well. Season with salt and pepper. Add to the mixture, toss to combine and serve topped with the spring onions.
