- A 1.5kg watermelon
- 125g caster sugar
- 1tsp chilli flakes
- Juice of two limes
- 1tsp flaky salt
- Knife and chopping board
- Freezer-proof dish
- If you can find a seedless watermelon, use that! Otherwise, chop yours up into bits, pulling the seeds out as you go.
- Put the chunks of watermelon, sugar, chilli, lime juice and salt in the blender and blitz until smooth.
- Pour into a dish, cover and place in the freezer. After an hour, scrape the frozen bits back into the centre, and return to the freezer.
- After around four hours (depending on how shallow your dish was) you’ll have granita. Scrape it with a fork, and serve the shavings in a glass.
