Watermelon Granita

  • A 1.5kg watermelon
  • 125g caster sugar
  • 1tsp chilli flakes
  • Juice of two limes
  • 1tsp flaky salt


  • Knife and chopping board
  • Blender
  • Freezer-proof dish
  • Fork
  1. If you can find a seedless watermelon, use that! Otherwise, chop yours up into bits, pulling the seeds out as you go.
  2. Put the chunks of watermelon, sugar, chilli, lime juice and salt in the blender and blitz until smooth.
  3. Pour into a dish, cover and place in the freezer. After an hour, scrape the frozen bits back into the centre, and return to the freezer.
  4. After around four hours (depending on how shallow your dish was) you’ll have granita. Scrape it with a fork, and serve the shavings in a glass.
