There’s something about passion fruit that feels special occasion-y. Any bars that serve cocktails will do you the traditional version, but the addition of the golden-hued tropical fruit, paired with bubbly prosecco, amps the drink up to "this really feels like a party" levels.
Preparation time 5 minutes
You will need: a muddler (an end of a wooden spoon will also do the job) and a highball glass
- 6 mint leaves
- 60 ml rum
- 30ml lime juice
- 15ml sugar syrup (we used Monin pure cane sugar syrup)
- Scooped ½ passionfruit
- Crushed ice
- Muddle the mint, rum, lime juice, sugar syrup and passion fruit in a highball glass.
- Top with prosecco, then add crushed ice.
- Garnish with a half passion fruit or mint.
