A genius idea for using up leftovers – doesn’t have to be feta and sun-dried tomatoes; throw in whatever you have in the fridge

  • Serves 1
  • Preparation time 10 minutes
  • Cooking time 30 minutes
  • A few sun-dried tomatoes (plus the oil)
  • 40g plain flour
  • 60ml milk
  • 1 egg
  • Chunks of feta cheese
  • ½ spring onion, sliced
  • Sea salt and freshly ground pepper
  1. Preheat your oven to 190ºC/fan 180ºC/gas mark 5.
  2. Pour enough of the oil from the sun-dried tomato jar into a small ovenproof dish to reach a depth of 1cm and heat it in the oven for about 10 minutes.
  3. Meanwhile, whisk the flour, milk and egg in a bowl or jug to make the batter and add a pinch of salt.
  4. When the oil is smoking hot, remove the dish from the oven and carefully pour in the batter. Throw the feta chunks into the middle of the dish, along with a few sun-dried tomatoes and the sliced spring onion. Place back in the oven and cook for about 30 minutes until golden brown (do not open the oven door during the first 20 minutes or your Yorkshire may collapse!). Sprinkle with pepper and serve straightaway.
