Tinned sardines and a few salty olives make a Mediterranean classic in minutes

  • PREPARATION TIME 10 minutes
  • COOKING TIME 10 minutes
  • 125g dried spaghetti
  • 1 garlic clove, sliced
  • 120g tin of whole sardines in oil, drained
  • Olive oil
  • ¼ red onion, roughly diced 
  • 200g chopped tomatoes (from a 400g tin)
  • Few black pitted olives
  • Sea salt and freshly ground black pepper
  1. Bring a pan of salted water to the boil and cook the spaghetti until al dente.
  2. Meanwhile, pan-fry the onion in a splash of olive oil over a medium heat for a few minutes. Add the garlic and, just before it starts to brown, add the chopped tomatoes and season well with salt and pepper. Next, add the sardines and black olives then simmer for five minutes to reduce the sauce. Serve the sauce on a bed of the spaghetti, drizzle with a generous glug of olive oil and add an extra sprinkling of cracked black pepper.
