  • Serves 4
  • Preparation time 5 minutes
  • Cooking time 15 minutes
  • 4 x 175g thick fillets of halibut 
  • Sea salt and freshly ground black pepper 
  • 1 small lime, quartered, to serve 
  •  
  • For the salsa: 
  • 12 cherry tomatoes, quartered
  • 4 spring onions, trimmed and chopped
  • 1 clove of garlic, peeled and chopped
  • 2 tbsp chopped coriander
  • 1 tsp chopped chilli pepper (deseeded, if you wish) 
  • 3 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • Good pinch of salt
  • Good pinch of sugar
  • Freshly ground black pepper 
  1. Preheat the oven to 200ºC/fan 180ºC/gas mark 6.
  2. Cut four sheets of greaseproof paper big enough to fold over the fish to make a parcel. Place each piece of halibut on a sheet and sprinkle with salt and pepper. Combine all the ingredients for the salsa then divide it evenly over the fish. 
  3. Seal up the parcels, place on a baking sheet and cook in the oven for about 15 minutes until the fish is just cooked through. 
  4. Drizzle the juice of a lime quarter over each fish just before serving. Serve with some boiled potatoes and a green salad.
