One pan, one bowl, one supper that hits the spot – nothing beats a spcicy Asian noodle soup

  • Serves 2
  • Preparation time 15 minutes
  • Cooking time 15 minutes
  • 1 tbsp vegetable oil
  • 1 tbsp sesame oil
  • 1 stick of lemongrass, half finely chopped, other half bruised
  • 3 spring onions, chopped
  • 2 garlic cloves, finely chopped
  • Thumb-sized piece of fresh ginger, peeled and finely chopped
  • 1 red chilli, deseeded and finely chopped
  • 2 chicken breasts, sliced
  • 150g large raw peeled prawns
  • 500ml chicken stock
  • 400ml can coconut milk
  • Juice of 1/2 lime (save the squeezed lime half)
  • 1-2 tbsp fish sauce
  • 1 tbsp tomato purée
  • 1 tsp peanut butter
  • 1 tsp palm sugar or light brown sugar
  • 1/2 tsp ground turmeric or a few strands of saffron (optional)
  • 200g dried rice noodles
  • Coriander leaves, to garnish
  1. Heat both the oils in a large pan and add the chopped lemongrass, spring onions, garlic, ginger and red chilli. Stir-fry over a low-medium heat for two minutes.
  2. Add the chicken and prawns, and cook for a further two to three minutes, until coloured. Pour in the stock, coconut milk and lime juice, and bring to a good simmer. Throw in the remaining lemongrass and the squeezed lime half.
  3. Add a tablespoon of fish sauce, the tomato purée, peanut butter, sugar and turmeric or saffron, if using. Simmer the soup gently for about 10 minutes.
  4. Meanwhile, place the rice noodles in a bowl and cover with boiling water. Leave for five minutes, then drain and add to the soup. Mix well and taste, adding more fish sauce or a squeeze of lime if you think it needs it.
  5. Serve ladled into deep bowls and garnish with coriander.
