What to eat tonight Runner beans with prawns and lemon 15 min Pick up prawns and runner beans on the way home for this super-quick stir-fry Posted on 27.07.15 Added on 27.07.15 Facebook Twitter Google+ Pinterest Email LinkedIn Pick up prawns and runner beans on the way home for this super-quick stir-fry Posted on 27.07.15 Serves 2 Preparation time 10 minutes Cooking time 5 minutes 300g runner beans, topped and tailed Oil 1 garlic clove, crushed 200g cooked peeled prawns Zest and juice of 1 lemon Sesame oil Chilli oil 2 tbsp flaked almonds, toasted Cut the runner beans into fine long strips using a bean shredder or a sharp knife. Cook them for two minutes in boiling salted water, then drain very well. Heat a little oil in a wok and add the garlic followed by the beans. Stir-fry over a high heat for one minute, then add the prawns and lemon zest. Cook for another minute, then season with a splash of sesame oil and chilli oil. Squeeze over some lemon and sprinkle with flaked almonds. Serve in bowls with rice, if you like.
